About

Vivian Haley-Zitlin is a professor in the Department of Food, Nutrition, and Packaging Sciences and is a registered dietitian. Her research focus is chronic disease prevention and treatment with an emphasis on translational research linking basic science and clinical application. Primary research interests include type 2 diabetes, cardiovascular disease, obesity and metabolic syndrome and the inter-relatedness of these diseases. Examination of the influences of nutrient and neutraceutical intake on disease, the efficacy of disease-specific dietary recommendations, and the effect of nutrition education programs on disease outcomes characterize Dr. Haley’s current research activities. Her training includes a NIA postdoctoral fellowship in the nutritional gerontology program in the departments of physiology and medicine at the University of Texas Health Science Center, San Antonio. Research populations include school-aged children to older adults. Her research has also utilized animal models and cell culture to answer study questions. She teaches Medical Nutrition Therapy, Metabolic Basis of Medical Nutrition Therapy, Advanced Human Nutrition and Professional Development in Dietetics and mentors student research teams focused on obesity and diabetes.

How their research is transforming health care

Haley-Zitlin’s research works toward transforming the care and management of chronic disease with a focus on diabetes, CVD and obesity. She has been involved with research teams delivering diabetes education and care for several years. She is also assessing the impacts of the New National School Lunch Program Guidelines on childhood obesity.
