About Carolina Canning
Carolina Canning is dedicated to helping you preserve safe, high quality foods. There are numerous resources for preserving foods. Many of them are not safe, including recipes passed down from previous generations and random internet searches. Clemson Extension provides only research-based information, procedures and instructions and may be relied upon for up-to-date, safe and accurate information.

Testing Pressure Canner Dial Gauges
A pressure canner dial gauge should be checked annually to ensure accuracy or if it has been dropped, soaked in water, or shows any other signs of damage. Clemson Cooperative Extension Food Systems and Safety Agents commonly perform these tests in their office and can also inspect the full canner to ensure your canner is ready for canning season.
